Local Love Nights – Featuring Stonecutter Spirits in April

We have teamed up with our friends at Stonecutter Spirits in Middlebury, our featured local producer this month! Every Thursday night in April we will serve a different Stonecutter cocktail. Each spotlights a different Stonecutter spirit, and each can be paired with a dish specifically designed by Chef Matt Corrente to compliment it (our full regular menu is also available). Come early – food specials available while they last!

Thursday, April 5 – First Love cocktail (featuring Stonecutter Spirits Heritage Cask Whiskey); paired with Scallops ‘Morteau’: pan-seared bay scallops cold smoked with juniper and conifers, served with stewed puy lentils, pork belly & pickled apple.

Thursday, April 12 – Princess (featuring Stonecutter Spirits Single Barrel Gin); paired with Crispy Pigs Tails: nuoc cham, pickled peanuts, cilantro, cabbage threads.

Thursday, April 19 – Sunflower (featuring Stonecutter Spirits Single Barrel Gin); paired with Fluke Crudo: raw North Atlantic fluke, avocado, yuzu kosho, jalepeno, shiso, tempura crispies.

Thursday, April 26 – Coach (featuring Stonecutter Spirits Heritage Cask Whiskey); paired with Foie Gras Terrine: chilled Hudson Valley foie gras, brioche, red wine-shallot jam, caramelized honey, hazelnuts.
